Melon Boats in Wild Blueberry Sea with Meringue Crowns
- 4 cups frozen Wild Blueberries
- 4 cups tart cherry juice
- 3 1/2 teaspoons sugar
- 1/4 teaspoon vanilla extract
- 1/4 cup cornstarch
- 1/2 honeydew melon, seeds removed, peeled
- 4 vanilla meringue cookies
Combine Wild Blueberries, cherry juice, sugar and vanilla in a large saucepan and bring to a boil. Mix cornstarch with 2 tablespoons of cold water. Stir into juice mixture and return to boil. When thickened, remove from heat and chill.
To Serve: Cut melon into eight thin wedges. Divide the chilled Wild Blueberry compote between 4 bowls and top each portion with 2 melon wedges. Float 1 meringue cookie on each. Preparation Time: Approximately 15 minutes plus cooling time. Serves 4.
