Wild Blueberry and Quinoa Parfait

1 c quinoa, rinsed
2 c. water
1 1/2 c fresh wild blueberries
1 c Greek yogurt
1 t cinnamon
1/3 c walnuts
1 t nutmeg
In saucepan, bring water to boil and stir in quinoa. Cover, reduce heat and simmer about 12 minutes or until water is absorbed. Remove from heat and cool. Chill in refrigerator.
Mix together blueberries and Greek yogurt; set aside.
In small bowl, combine honey, cinnamon and nutmeg.
Divide chilled quinoa into 6 servings, top with blueberry-yogurt mixture and drizzle each serving with honey mixture.
Top with walnuts and another drizzle of the honey mixture.
