
Maine Wild Blueberry Soup
Ingredients
- 4 1/2 cups fresh Wild Blueberries
- 1 cup Pinot Noir
- 1/4 cup honey
- vanilla crème fraîche for garnish
Preparation
In a food processor, combine the blueblueberries, Pinot Noir, and honey; blend until the mixture becomes smooth, do not strain. Chill the soup before serving. Garnish each soup bowl with vanilla crème fraîche. Serves 4.
