Wild Blueberry Oatmeal Tahini Smoothie
¼ cup rolled oats
1 date, torn into pieces
⅓ cup boiling water
½ cup frozen Wild Blueberries
½ cup milk of choice (2% dairy milk used here)
¼ teaspoon cinnamon
¼ teaspoon vanilla extract
1 tablespoon tahini
1-2 cups ice, divided
- Add the oats, dates and boiling water to a small bowl. Cover with a plate and let sit for 5-7 minutes, until most of the water is absorbed.
- Meanwhile, place the remaining ingredients (except the ice) into the blender. Add the cooked oatmeal. Blend until smooth and creamy.
- Add 1 cup of ice and blend again until crushed. Serve over additional ice (optional).
**Note: This recipe can also be prepared in advance. To make an overnight version: Omit the boiling water. Soak all of the smoothie ingredients (except the ice) in a container, covered, for 6-12 hours. (I used the blender with the blade removed.) In the morning, blend as described above.
