American Skewer with Honey-Blueberry Sauce
For the sauce:
300 g wild blueberries from Canada (frozen)
100 ml tomato ketchup
1-2 tbs. honey
2 tbs. sauce thickener (light)
For 1 big Skewer (or 4 smaller ones):
400 g per pork and beef tenderloin
2 tbs. oil
4 big onions
150 grown through, smoked bacon
- Bring blueberries to a boil together with tomato ketchup and honey while stirring. Stir in sauce thickener and let simmer for ca. 2 minutes while still stirring. Season to taste with a little salt and pepper. Let cool.
- Cut pork and beef tenderloin into large pieces. Mix oil with salt and pepper and slather the meat. Peel the onions, cut into half and loosen the layers. Cut bacon into thick stripes. Place meat, onions and bacon on a large metal skewer. Brown strongly in a large grill pan. Then place on baking paper on baking tray. Cook in preheated oven at 100 degrees (Gas: level 1-2, air-jet oven: 80 degrees) for approximately 15-20 minutes.
- Serve the sauce together with the skewer.
Serve with potatoes en papillote and crème fraîche.
Preparation Time: ca. 40 Minutes + Cooling Time
Advice: Before preparing the skewers, let potatoes cook in oven at 200 degrees. Take potatoes out of the oven and turn down the heat. The potatoes remain hot within the foil until the skewers are ready.
