Crumble Buns with Blueberries Picture


Makes 10 pieces

For the yeast dough:
100 g butter
125 ml milk
350 g flour
30 g fresh yeast
100 g sugar
1 egg (M)

In addition:
300 g wild blueberries from Canada (frozen)

For the crumbles:
50 g butter
90 g flour
50 g sugar
1 tbsp. cinnamon

In addition:
2 tbs. sugar for dredging
Icing sugar as desired


  1. Melt butter and put aside. Heat up milk until lukewarm. Put flour into a bowl and make a dint in the middle. Crumble yeast in there. Add one tea spoon of sugar. Pour in milk and mix everything with a little flour. Cover and let g o at a warm place for approximately 15 minutes.
  2. For the crumbles melt butter. Mix flour with sugar and cinnamon. Add butter and mix all with a fork so that crumbles are formed.
  3. For the dough give remaining sugar, butter and egg to the pre-dough into the bowl and stir with a dough hook until smooth. Cover and let go 30-40 minutes.
  4. Shortly knead dough. Cut into 10 pieces. Roll every piece in floured hands to a ball and flatten a little. Then drag the dough a little from the middle to the outside so that a rim is formed. Put pieces on baking paper on baking tray. Spread frozen blueberries and press them gently with your hands into the dough. Bake in preheated oven at 180 degrees (Gas: 2-3 level, air-jet oven: 160 degrees) for approximately 18-20 minutes. Dredge the still hot buns with sugar. Add icing sugar as desired.
