Shrimp Skewers with Spicy Wild Blueberry Sauce
- 2 shallots
- 2 cloves garlic
- 1 piece ginger (walnut-sized)
- 1 jalapeno pepper
- 2 tablespoons sesame oil
- 1 cup frozen Wild Blueberries
- 2 tablespoons soy sauce
- 1 teaspoon brown sugar
- 8 shrimps (jumbo with shell)
- 8 ounces spinach
- 1 tablespoon light sesame seeds
- 1 tablespoon dark sesame seeds
- 1 tablespoon olive oil
- 8 wooden skewers
Peel shallots, garlic, and ginger, then finely chop. Cut open chili pepper lengthwise, scrape out seeds, and finely chop pepper.
Heat 1 tablespoon sesame oil and sauté half of the prepared spices about 5 minutes. Add Wild Blueberries, sugar and soy sauce. Simmer for 10 minutes. Remove from heat and let rest.
Meanwhile, peel the shrimp. Cut shrimp in half (length-wise), devein, wash, and pat dry. Stick each of the two shrimp halves on skewers. Season with salt and pepper.
Clean and wash spinach if necessary. Heat 1 tablespoon sesame oil and sauté the remaining spices. Add spinach and let it cook with the spices. Season with salt and pepper. Sprinkle with sesame seeds.
Heat the olive oil. Fry shrimp skewers for about 2-3 minutes. Serve the shrimp, spinach, and blueberry sauce together. Serves 4.
