1 1/2 cups frozen wild blueberries

1 cup water

1 Tablespoon sugar

1 Tablespoon maple syrup

 

1 ½-2 cups waffle mix, or enough to make waffles for 4 people

 

4-6 eggs

pinch of salt and pepper

1-2 teaspoons butter

 

4-6 slices bacon

Optional waffle add-ins: frozen wild blueberries, chocolate chips

  1. Add frozen wild blueberries, water, sugar, and maple syrup to a small saucepan. Cover and simmer over medium-low heat for 15-20 minutes until slightly thickened. Mash berries to thicken it up more, if desired.
  2. Prepare waffles according to package directions.
  3. Fry bacon.
  4. Whisk together eggs, salt, and pepper. Set aside until about 5 minutes before serving. Melt butter in a small frying pan, then add eggs and cook over medium heat, stirring constantly until desired doneness.
  5. Plate waffles, bacon, eggs, and pour syrup into a bowl or syrup dispenser. Eat immediately.
