1 1/2 cups frozen wild blueberries
1 cup water
1 Tablespoon sugar
1 Tablespoon maple syrup
1 ½-2 cups waffle mix, or enough to make waffles for 4 people
pinch of salt and pepper
1-2 teaspoons butter
4-6 slices bacon
Optional waffle add-ins: frozen wild blueberries, chocolate chips
- Add frozen wild blueberries, water, sugar, and maple syrup to a small saucepan. Cover and simmer over medium-low heat for 15-20 minutes until slightly thickened. Mash berries to thicken it up more, if desired.
- Prepare waffles according to package directions.
- Fry bacon.
- Whisk together eggs, salt, and pepper. Set aside until about 5 minutes before serving. Melt butter in a small frying pan, then add eggs and cook over medium heat, stirring constantly until desired doneness.
- Plate waffles, bacon, eggs, and pour syrup into a bowl or syrup dispenser. Eat immediately.
