Waldorf Salad with Wild Blueberries
- ¼ cup plain yogurt
- ¼ cup light mayonnaise
- ½ teaspoon Dijon mustard
- 1 tablespoon lemon juice
- ¼ teaspoon salt
- 1/8 teaspoon nutmeg
- ¼ cup pistachios
- 2 stalks celery
- 2 large tart apples
- 1 cup frozen Wild Blueberries
- Lettuce leaves (such as baby Romaine)
Mix yogurt, mayonnaise, mustard, lemon juice, salt, pepper. Season to taste.
Coarsely chop the pistachios. Wash celery. Wash apples and remove seeds. Finely chop the apples and celery. Combine with the sauce and nuts and refrigerate until ready to serve.
Wash lettuce leaves, pat dry,
To serve, place lettuce in 4 glasses and add salad. Sprinkle with thawed Wild Blueberries. Serves 4.
