Wild Blueberry Coated Cashews

Wild Blueberry Coated Cashews Picture


1 cup frozen Wild Blueberries
2 tablespoons maple syrup
1 cup raw cashews (5 oz.)


  1. Preheat oven to 300°F.
  2. Line a rimmed baking sheet with parchment paper.
  3. Place Wild Blueberries, maple syrup and 2 tablespoons of water into a large nonstick frying pan.
  4. Bring to a boil.
  5. Reduce the heat to medium and simmer for 12-15 minutes.
  6. Occasionally mix the blueberries, mashing them slightly with the back of a wooden spoon.
  7. Once most of the liquid has evaporated, add in the cashews.
  8. Cook for an additional minute while stirring to evenly coat in the blueberry mixture.
  9. Spread the nuts out on a the lined baking sheet.
  10. Roast for 30 minutes.
  11. Remove from oven and cool completely.
  12. Break apart any large pieces before serving.
