Wild Blueberry Salsa
Recipe: Wild Blueberry Salsa from the Freezer Aisle by Liz Weiss, MS, RD.
1¼ cups frozen Wild Blueberries
2/3 cup frozen corn kernels, thawed
1/2 cup finely diced red bell pepper (cut into 1/4-inch pieces)
1/3 cup loosely packed fresh cilantro, chopped
1 green onion, trim 1-inch from end and slice green, light green, and white parts into thin rounds
A few pinches of dried cumin, dried chili powder, and ground cinnamon
A few pinches of lime zest
A few squeezes of fresh lime juice
Place the frozen Wild Blueberries in a medium-size glass bowl and heat in the microwave until just thawed, about 1 minute. Transfer to a strainer, place over a bowl, and drain to remove juice, about 10 minutes. Shake gently every few minutes to release juices.
Place the drained Wild Blueberries, corn, bell pepper, cilantro, green onion, cumin, chili powder, cinnamon, lime zest, and lime juice in a bowl and stir gently to combine. Add the spices, zest, and lime juice, taste, and adjust seasoning by adding a few more pinches. Season with kosher salt to taste.
