Wild Blueberry Overnight Oats

Easy to prepare for a quick grab and go breakfast service, these creamy, chilled oats will be a student favorite. A simple item with vanilla yogurt, oats, and wild blueberries. The wild blueberry flavor pops in this breakfast item. The Wild Blueberry Overnight Oats are perfect for breakfast in the classroom because it is served chilled. Additionally, this menu item provides 2 meal components at breakfast – ½ cup fruit and 2 grains!

6 quarts, 1 cupYogurt, vanilla, low fat
2 ozVanilla extract
2 cupsMilk, nonfat or low fat
2 ¼ lbsOats, quick, dry
6 ¾ lbsWild blueberries, frozen, thawed

1.Combine yogurt, vanilla extract and milk in a large container. Whisk to combine.

2.Stir in oats.

3.Place overnight oats mixture in the refrigerator for 4 hours or overnight.

4.Place ¼ cup wild blueberries at the bottom of a 12 oz cup. Add ⅝ cup (# 6 scoop) of overnight oats. Top with an additional ¼ cup of wild blueberries.

5.Alternatively, place the overnight oats and the chilled wild blueberries on a self-service bar. Serve 5/8 cup (#6 scoop) of overnight oats and ½ cup (#8 scoop) of wild blueberries.
